Established mid 1920's in the north of France, "Cafés Saphil" was a family business dedicated to service, professionalism and producing only the finest quality coffee. The business was created by Bertrand Pommier's great grandfather Sajot and great grand mother Philibee - the word "Saphil" being a combination of both their first names. It was, back then, more a grocery store, but roasting and producing coffee to sell, its speciality.
With WWII "Cafés Saphil" had to close and the Pommier family left Dieppe for the south of France where there was a "free zone". However, in time they were able to return to Dieppe and start again. Then towards the end of the century, when the town became full of supermarkets, the need for small grocery stores were less."Cafés Saphil" looked simply to provide coffee, tea, and wine and these were the last things sold in the shop before Bertrand's father gave over the business to new owners and new name.
Bertrand Pommier, fourth generation coffee roaster, immigrated to Australia around 10 years ago and has since worked for coffee roasting companies like "Bliss Coffee" and "Byron Bay Coffee Company"... as a roaster and barista trainer.
Having recently set up his own small coffee business in the beautiful town of Byron Bay, Bertrand has been around the area for more than eight years, to contribute his significant experience with coffee.
